Amy Beth Campbell - Shrimp Taco Recipe

 

Cilantro Lime Crema:

 

1/4 C Mayo - get the good kind with flavor like Dukes or Hellman’s/Best Foods

 

1/4 C Sour Cream

 

1 1/2 Tbsp fresh lime juice

                            

3 Tbsp very finely chopped cilantro

 

1 clove finely minced garlic

 

Salt and freshly ground black pepper

 

Mix all together!

 

Tacos:

 

Any kind of shrimp will do! I prefer already deveined and frozen. I love the raw wild Argentinian shrimp from Trader Joe’s!

 

Sauté shrimp in pan with avocado oil until fully cooked. I like to sauté with chili lime seasoning from Trader Joe’s and some pepper

 

Warm tortillas - we love to do this with a cast iron pan!

 

Flip over and add cheese until it melts.

 

Add shrimp to tortillas and top with a generous amount of the creama, some mixed greens, and more cilantro! You could also top with green onions, tomatoes... whatever sounds good to you!

 

Dinner ready in 10 mins!
